Waffles are my easy go-to option whenever I’m craving breakfast food or I don’t have anything planned for dinner. Ask my husband; it happens a lot more than he would like :).
I’ve enhanced this Weight Watcher’s Oatmeal Pancake recipe to be my favorite healthy apple waffles. They’re so easy and quick to make. Plus, these waffles are supper yummy and good for you too.
Cottage Cheese Oatmeal Apple Waffles
Makes 2 waffles
- 3 egg whites
- 1/2 cup rolled oats, dry
- 1/2 cup cottage cheese
- 1 teaspoon sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1 apple
- Cut and remove the core from the apple. Thinly dice up 1/2 of the apple. Put the other 1/2 of the apple into a blender.
- Put the rest of the ingredients into the blender with the apple.
- Blend until smooth.
- Add diced up apple pieces and stir in.
- Cook in a waffle iron. Enjoy!
Note: These can be cooked up as pancakes. I found they cook better in a waffle iron.

These waffles are as easy as 1, 2, 3.
- Put ingredients into a blender.
- Blend, then add chopped apples.
- Cook and enjoy.
I’m all for quick breakfasts, especially with a screaming, hungry toddler! These waffles come out in less than 15 minutes from start to finish. Now that’s fast :).
To cut down on fat, this recipe only uses the egg whites. Then cottage cheese and oats are used as a low calorie substitution for flour and milk. Enough flavor is added with some sugar, vanilla, cinnamon and apple. Overall, you have a dense, delicious waffle low in fat and calories.
There are benefits to cooking with cinnamon, it’s a healthy choice in and of itself.
Keep this meal healthy by topping the waffles with Zoi Vanilla Greek yogurt. It’s much better for you than syrup and I think it tastes amazing!

These waffles have the perfect boost of flavor with the added apple. I’ve tried pears, but apples give it the essence of sweet with the cinnamon that’s my favorite.
